I think each could have merit, though flawed in application

Celery -- Though this one probably springs to mind as unappetizing, it has potential in use as an aspic, especially for vegetarians.

Coffee -- Since people usually think of Jell-o as a sweet dessert, this one might be a little off-putting, but is still perfectly reasonable if the proper flavor were there. For my tastes, it would have to be rather strong, but this application is not too dissimilar from a coffee granita.

The other three would be problematic in the flavor department -- cola isn't very tasty unless it's carbonated, artificial apple flavor might be a little bland (though I think they could have potential with sour apple), and chocolate probably doesn't impart the right taste or mouth-feel in a gelatin form.

I would imagine by themselves they wouldn't be too tasty, but Jello can be an ingredient, too. Combined with some other desserts, they might be pretty good (except for the celery - that as to be just for crazy 50s recipes that have bizarre veggies in them).
