If you're facing a lot of priests, low-damage Monsters are a poor investment.

However, one monster is interesting against priests: the Dragon. "2 damage to each adventurer, and skip the healing step." Its attack is only double that of the Slime, but the healing-skip...hm...

I'll say the obvious: to minimize the number of hits healed by priests, you want to put all your monsters into as few battles as possible, preferably including Dragons (and Anti-Magic Darts) to cancel healing.

One critter works remarkably well with this strategy: Ghosts! - they're cheap, and you can send in a legion of them with your Dragon to assassinate key party members. That's not to say you can't use any other directed attack, like the Witch's, either.

One critter works remarkably poorly with this strategy: Vampires! - they have a very low damage / cost ratio. The only time I would team them is if you can use a Dragon/Ghost/Vampire strike on round 1 to eliminate some key ability (not a Priest!), and you still have a multi-round slog to drill through the other adventurers ahead of you. But that's 5 evil - eek!

Note, however, that the vampire can't help eliminate the healing, being repelled by priests

But the vampire CAN be used to kill the Paladins, since the Paladins are not considered Priests
