So, Mystery Bob bought stuff to make fried rice over the weekend, and after one thing or another, he didn't make it.

I will take over the reins and make my first attempt this evening!!!!

Wish me luck!!

We have shrimp and ham for the meats and green onions, red pepper, bamboo shoots, and water chestnuts for the veggies.

Oh, and of course, the scrambled eggs.

I also bought some frozen veggie egg rolls to heat up in the toaster oven.

Woo-Hoo!!!

Can't wait!

Good luck! I add some rice wine to my fried rice along with the soy sauce. Mine is still not as good as my mother's. Never will be either.

No, not really. I just made it up. Somehow the idea of dipping individual grains of rice in a Southern Style seasoned batter then dropping them in a deep fryer struck me as funny. I think they'd be kind of like really, really tiny hush puppies.

If you can get your hands on Chinese style sausage, that makes an awesome meat. Cube it. Fry it a bit to flavor the oil, and then add the other stuff on top.

And around here (S.F.), Chinese families will use just frozen veg (peas and carrots, etc). Not as delectable, I know, but it's really a simple dish to use up the leftover rice.

How did yours turn out?

The rice got a little mashed in the process and I know that an ingredient is either off or missing, but I can't put my finger on it.

Oh well, a decent first attempt.

I could give you my recipe for fried rice. Granted mine is a little bit more sticky and it isn't like restaurant fried rice but I like mine better. It's more Thai style than Chinese.

Two things which you may or may not have done. First, I recommend letting the rice cool completely after initial cooking, otherwise you can get mushy rice. Second, a little Chinese 5 spice powder I find does wonders for flavor. Just need a teaspoon or so for a couple cups of cooked rice, or to your taste.

This. Also, ham is generally cured and would interfere with the other flavors.


Hmmm.......no the rice was cooked the day before and was cold from the refrigerator!!!!

Then perhaps either the rice was a little overcooked to begin with or there was a smidge too much liquid added? Obviously, just pulling things out the air, but these would generally create the mushy texture you experienced. whistle

The 3 things I've found you have to have for the right taste (according to my taste buds, of course) are peanut oil, ginger, and soy sauce (during cooking). Gotta have the egg too, which I saw you mention. That's really the extent of my seasoning, beyond some fresh garlic (but then I put that in every pan dish I make).
