I was wondering if the two parts of a turn are meant to simulate simultaneity wrt sight.

Say a novice moves from 78 to 51 on her turn while a guard is at 80. She passes the noise check. The guard moves from 80 to 76 on her move.

Is there any visible sign of the novice at any point during these moves?

I would say not, that movement is alternating and not simultaneous, wondering if I interpreted the rules properly.

You are correct. The nun never sees that novice on those particular moves.
