The rules say that you tally your points by adding up the goods and passengers you transported during the game. additionally, you get 2VPs as a bonus for each completed set. After that, you should move your marker on the profit and loss track accordingly.

What happens when you reach the top of the profit and loss track? Do you waste the extra points?

No, the rules say to add or subtract wherever you are on the profit and loss track to your total. Then subtract 1 for each track link still on the board.
You don't move it at all in final scoring, just during the game. And if it happens during the game you cannot go beyond the highest or lowest points.

2 points for each set of stone/cheese/red/green
add current profit/loss value
