Apparently, there are only 3 Hunt cards in the entire deck. Do you find that they have a real impact on the game, or do you just not worry about your Shadow cards being "hunted"?

If you assume the three will be played at separate times, there will be hunting in three of the twelve possible card-laying opportunities. Thus, if you were to play randomly, 25% (almost) of the Shadow cards would be wiped out by hunt cards.

I think it really depends on the scale, in a smaller game less of the deck is used and hence, fewer hunt cards are likely to come up, which makes them almost a non-factor. The lack of being able to carry over cards from round to round also adds to that factor. In a full size game where you would see the entire deck they would have a much larger impact.

Does the Hunt card just close its targets or does it eliminate them entirely?

We play that it closes them, nullifying their open/close ability. They can be opened later. I'm pretty sure this is correct.
