Both are easy to teach and play.

After my research I decided was to pick up Winner's Circle, and I haven't looked back. I really enjoy Winner's Circle (was known as Royal Turf in previous printings). Horse Fever and Long Shot, I decided they both over complicated the game with the variable power cards. I did like that Long Shot allowed you to "own" horses, as well as bet on them... but I didn't like that it's all about one single race (that takes about 1 hour. I didn't want TurfMaster, because it was all about racing... and I wanted a betting based game.

Things I liked about Winner's Circle and helped with my decision...
-it is simple to teach and learn (even my 70+ year old grandparents played very competitively on their first attempt).
-it has enough strategy (with betting, and deciding which horse to move on your roll)... it isn't just a roll, move and watch the results.
-3 races (with final race being double payouts) in 1 hour makes it very exciting, and gives chances for people to get back in the game late (if they had a bad first race) to get the win.

On a note, with Winner's Circle I always play the "royal turf rule" (each horse must have a unique primary movement value) and the "hidden bets w/ the bluffing" rules.

If you're interested in the pure race, I think TurfMaster is your best bet. If you want the whole race track experience, with betting being a major feature, I think Winner's Circle, The Really Nasty Horse Racing Game and Win, Place & Show are all good choices.
