i like em sammich styles, two crackers cheese in the middle. if the cheese is cut to thin, i double up.

Too much cracker. Gotta be open face. If it's cheddar on a Triscuit, I nuke them for 15 seconds or so.

Agreed. A good cracker is important (Triscuits are preferred), but in the final analysis, the cracker is just a delivery system for the cheese.

Depends - do I want tomato and pepper? Then its open. Otherwise, sandwich 'em and have little butter worms (I'm assuming perforated biscuits here).

Always open other wide the Cracker to Cheese ratio is too high.

Here my current favorite craker option (from Jamie Oliver, who is a dick, but makes nice food):
Take a small cracker (like a Ritz, I don't know the US equivilent)
Crumble some really mature chedder on it.
drizzle with some honey
and sprinkle with a pinch of Coffee (yup, coffee any sort, but freshly ground works best.)

Seriously tasty. Everyone who has tried it so far has taken some convincing and then been a complete convert. Try it. You owe it to yourself.

Neither would I! But a light dusting (like a tiny pinch) over honey and cheese. Great!

Ok, I can't find the exact link, but it is sort of mentioned in the above list under Manchego, where he combines coffee, honey and cheese. (In the TV episode where he made this, he says it's great on a cracker and just puts it together as an aside).

I'm just posting this so you know I'm not making this up (as I feel I may have been over stressing it up to now!)

Just as long as you don't follow "open face" up with sandwich. That wouldn't be a sandwich. If only two people are getting intimate, you wouldn't call it an open-faced lovin' sandwich, now would you?

You won't convert me. I seriously hate coffee. The slightest taste of coffee - like a spoon used for stirring coffee which is then used to stir my cup of tea - makes me gag.

My missus is exactly the same. Hates coffee can't stand it. However about 2 years ago she actually bought me a perculator, which I'm allowed to use on special occasions, and she can now 'bear' the smell. As long as she is not eating.

I hated it too, until about two years ago. I decided to try to start drinking it every once in a while to see if I could acquire a taste for it. It took a while, but I eventually did. Now I really enjoy it. IMO, if I can learn to like coffee, anyone can.
