There is even an example in the revised rulebook, but it´s very unfortunately written regarding my question.
There is a "Zeke" involved which has no target and a Wildcat, which would have one, but just isn´t mentioned anymore (page 29).
I´m confused...

Generally, aircraft only get 1 attack.

I'd recommend using the 'strafing' rules in the advanced rules section on pages 44 & 45 of the rulebook (also the ASW threat and small ship evasion rules in the same section).

Having read through some rules clarification threads, even using the standard rules, aircraft only get one attack per turn, so can't use AA + gunnery vs ships, no (even though it doesn't state this in the rulebook, only that aircraft are limited to one attack per phase).

Ha! I had the exact same reaction when I started playing. ("Why did the rules just act like the Wildcat disappeared?!")

For confirmation, I did manage to find this in the February 2009 rules updates:

FAQ wrote:
E. Air Attack Phase
An aircraft can attack only once per turn (unless a special ability states otherwise).
Aircraft can make Gunnery attacks against Ships only if they were committed to a Strafing
mission during the Air Mission phase.
• When you place an Aircraft in the Air Mission phase, you must announce whether it is
Strafing. To indicate this, place the Aircraft so its base straddles the bow or stern of a ship in
the sector or place some other type of marker.
• A Strafing Aircraft suffers a -2 penalty to Armor and Vital Armor.
• A Strafing Aircraft cannot use its Escort special ability.
• An Aircraft that isn't Strafing can't use its Gunnery value in the Air Attack phase.
