Most scenarios end with the drawing of a tile that sets up one more double tile with a boss. From that time on, do you still draw encounter cards during each person's turn as you no longer are discovering new tiles?

That part of the rules does not change, unless the adventure specifically states otherwise. Your heroes may still come across new passages in their battle against the final villain (and come across additional monsters,) and/or encounter further hazards in the already-revealed caverns.

These additional tiles may hinder or help you in your quest, or they may have no appreciable effect. Just today I finished a battle against Yvonnel Baenre, and made use of a dark chasm behind her forces to help divide her attention.

Also, LoD has some encounters that are actually helpful. Collapsing ceiling helped me defeat Shimmergloom.

It's the formula for these games. The first half of the game is to whittle down the heroes (HP and Daily Powers) while they gear up for the end game (earning treasure and XP). The treasures help against the "end boss" and the XP help against the end encounters (since you're usually not exploring anymore). You should have at least 10XP stored up by the time you hit that goal tile.
