Are the odd colors chosen for the resources an homage to Master of Orion 2?

Pink for Science seems to be the most obvious example.

I think the colors are mostly a function of not clashing with the bold player colors, plus consideration for colorblindness.

I doubt it's fully colorblind-friendly, what with the spread of colors needed, but I recall some discussion and feedback about how to better distinguish the planet colors plus the grey "anything" planets.

This, really. There aren't that many "common" colours left after the six player colours.
