I've been running a game night at my local FLGS for a few months now. It started off pretty well with about 4-6 in attendance on average and died down a bit over the holidays, but has started to pick up again. We're doing it on Monday nights, but I'm considering switching to Thursdays. I know that there are some people who can't come Mondays who would come if it were moved to Thursday. On the flip side, there are others who come on Mondays who might not come if it were changed.
I know you can never please everyone, but I'll gladly accept any words of wisdom on the subject.
Time is also a factor as the store (and the mall) closes at 9:00 and we have a difficult time starting earlier than 7:00. Set up and explaination usually take a good chunk out of the two hours we have, so we often don't get to finish our games.
Here is a list of games I haven't played that the store has on their demo shelf and are at our disposal. Can anyone make any recommendations from this list that would be easy to learn and squeeze into our time frame? Any comments would be appreciated.
Conquest of Pangea
Shadows Over Camelot
Wealth of Nations
Railways of the World
From this list, only Railway of The World and Wealth of Nation are over your time frame. Haven't play Conquest of Pangea so can't comment on that.
Transamerica and Cargo Noir will fit perfectly in your time frame you could play both in one night including rule explanation.

Cutthroat Caverns is quick to explain and play within 2 hours. I second Transamerica as already suggested. Haven't played any of the other suggestions so can't comment on those.

Stonehenge _ used to own this and got rid of it. The games will play quick, but they are not very good games. They are pretty weak. It was a very disappointing purchase for me.
Small World This is a great choice.
Cargo Noir I have not played his.
Cutthroat Caverns This will probably fit into the time frame just fine.
Conquest of Pangea I have not played his.
Shadows Over Camelot Even though I have not played this, I have heard good things and it should fit into time frame if you start promptly and are quick with rules explanation.
Wealth of Nations Great game but too long for time slot.
Railways of the World Great game but too long for time slot.
Trans America Even though I have not played this, I have heard good thing. This should easily fit into time slot.
You may want to print off play aids that ease the play for new players. That can help compress play time for games as well and speed up the learning / teaching time. Good luck and have fun.
