I don't play to win - I play for enjoyment and social interaction.

While Hoth is IMO the best 'big battle' of the Trilogy, Endor would make a good follow-up game. AT-STs, Speeder Bikes and Stormtroopers for the Empire; Commandos, Ewoks and Ewok Gliders for the Rebels. Rebels objective is to enter and blow up the shield bunker, Imperials job is to wipe out the Rebels.

The only problem is the lack of Imperial 'characters' for the battle; you've got Han, Leia and Chewie for the Rebels, but who do the Empire have? I'd be fine with balancing this out with extra troops on the Imperial side (so it was more of a 'numbers' vs 'skill' match) but I don't know if Lego would be happy that way or if kids would want to play the 'bad guys' if they didn't have Boba Fett or Darth Vader!
