I'm looking for clarification on airpower striking AFVs in the open. Do AFVs get to roll for their Save Number against an airstrike?

Referencing TUS rule 9.5 Airstrikes bullet 4, "The airstrike counter's owner rolls as per 6.1. The target owner rolls a number of defensive dice (d6) equal to the defensive bonus of terrain".

So for an AFV in the open that would mean there is no terrain modifier and no defensive die roll.

However, rule 6.1.6 says "Hard targets (AFVs) receive a maximum Defensive Bonus of two dice, regardless of the terain they are in or their concelament status". This implies there's some sort of defensive die roll irrespective of the mode of attack (direct fire, airstrike, arty).

Correct. No defensive roll if in open terrain. If in woods or town they will get just one defensive die.

6.1.6 MAXIMUM DEFENSIVE BONUS is a catch-all rule for every situation, it does not imply Hard AFV's always get 2 defensive dice.

OK, so if an AFV is caught out in the open by an airstrike, he is screwed. No opportunity to roll ANY die to mitigate the attack.

No "Save" die from the AFV counter "Save Number" and no Defensive Bonus die for the terrain.

Nope - as you indicated, they are screwed..... There was a reason NATO doctrine was heavily weighted towards airpower.

The only real hope is to keep AA close by since AA is resolved BEFORE the Aistriks occures.
