I made 3 pounds of medieval charoset last night. I didn't quite have the nerve to follow the recipe I found/synthesized; I have a big container of "low-test" and a smaller container of "high-test" which does include the traditional ingredients I was most skeptical of, (apple cider) vinegar and black pepper.

Last night it was drippy but this morning it has all congealed quite nicely, and both low-test and high-test are very tasty.

It's alcohol-free (yes, charoset without wine!) and the only likely allergen is almonds. All the principal ingredients are mentioned in the Song of Songs.

1 pound fresh dates (note to self: next year buy them pitted!)
1 pound black figs
2 cups slivered almonds
6 oz. candied ginger
3 cups pomegranate juice, more or less
1/4 tsp cloves
1/2 tsp cardamom
2 tsp cinnamon

Roughly chop dates, figs, and ginger into a bowl with pomegranate juice. Add almonds and mix. Stir spices into 2 oz of juice and mix through.

I set aside 2/3 of this and then for the high test added:

2 oz. apple cider vinegar
1 tsp fresh ground black pepper
1/8 tsp cloves
1/4 tsp cardamom
1 tsp cinnamon
1/8 tsp red chili powder (ok, that's not traditional. Next year I'll follow my urge to use half a habanero)

(Done the same way -- mix spices into a bit of liquid in a small bowl and then add to main mixture. For this part my measurements are a lot more approximate.)

(Confused? Charoset is a traditional ceremonial food for the Passover Seder. Shir ha-Shirim is known in English as the Song of Songs, the book of the Bible that is either love poetry or a parable about the relationship between G-d and Israel, depending on your perspective, one of the Bible readings for Passover.)

Our charoset was finished off insanely fast this year.

My wife makes it up each year and doesn't really use a recipe.

It involved grape juice, walnuts, dried apricots, dates, raisins, and possibly a few other things...


Oh man why am I at work this morning. I am freaking exhausted.
