Just finished our first game last night. We had fun and enjoyed the mechanics of the game, but one thing sapped the fun right out:

Bad rolls when placing a room.

There were 3 players which meant 12 regular rooms.
During the game, 7 encounters were drawn.
Only 3 treasures were drawn.
No treasures and encounters were drawn on the same tile.

So 7 + 3 = 10 cards for 10 rooms. Meaning that for 2 rooms the dice roll indicated nothing would happen. We knew the game was based heavily on luck, but with so few monsters (all weak, killed-when-encountered ones) and so little treasure (that none of us found any use for really) we didn't feel like epic adventures on a dungeon delve. We felt like a clean-up crew that was being under-worked and underpaid, but at least we could joke about it.

But we know that this game has the potential, so can anyone help with ways to mitigate this on our next game?

Play more. Seriously. This is one of those things that happens, but it's rare. The more you play, the more you will see that this is the exception rather than the rule. I bet even your next game is completely different in feel.
