Turn 5 is a Long Winter turn. If turn 6 changes from mud to snow, it becomes a Long Winter turn as well, correct?

Yes, any consecutive snow turn is a long winter turn.

Yes this is correct.

Page 17 pf the rules:

Long Winter Game Turns: When there are
consecutive Snow turns, the second (and possibly
third) turn in a row of Snow is called a
Long Winter turn. Place the Long Winter marker
on the map somewhere as a reminder. Instead of Snow weather,
the effects of Long Winter (below) go into effect for those
Game Turns:
