Has anyone ever successfully run a gaming event at a pub where most of the participants don't know each other?

Obviously the pub management would want to make a profit and not have people sit around not buying anything while they play games. For example, as the host, one might have to be proactive in interacting with people between games in getting dollars to leave wallets.

I'm curious if any people here have acted as hosts in this situation, and if so, if they'd care to share any tips on keeping both sides happy.
