Is there an "official" was to sticker the dice to have certain faces opposite? I know it doesn't matter, but I was just curious.

this is the official sticker guide from their website. Not sure if it matters or not but I didn't want to take any chances so I followed this.

It doesn't matter. As long as you get the right stickers on the right die.

Standard six-sided dice have opposite sides that equal 7. I'm not sure if this has more to do with tradition, or if it actually adds to the precision in getting a random result.

old thread, but, I wondered this too. But yeah, I have at least a touch of OCPD too...

anyway, it seems to me the 'official' way to label all the dice would be by the example sheets that come in all the expansions. On all of them (that I have seen, anyway) the dice are labeled thusly...

stickers on sheet, from left to right...
123456

stickers on die...
blank1
526
blank3
blank4

but yes, I admit game-wise, it makes do difference as long as the correct stickers are on the correct dice. It would really bother me not to use this pattern though. My problem, not yours...
