Have you tried any of the Empire Builder Rail Games games like Empire Builder and Eurorails? There's even an intro version now: Empire Express

Not that you could likely find a copy nowadays, but Himalaya is a great game. Pick up and deliver with programmed movement on the board ala RoboRally.

Auf Achse and Merchant of Venus are both good choices.

Just get Bombay. For $15 on Tanga the value can't be beat.

How about Duck Dealers, for another space alternative to Merchants of Venus.

Finca
Rondel for goods, deliver goods. It is on the lighter side, and very very very easy to learn/teach.

I enjoyed Catan: Traders & Barbarians quite a bit. If you like Catan, get that expansion, it makes it a much more interesting game

+1 Bombay, which is quick. It's on the lighter side, but has enough going on that it's not "light".

If you want something with a bit more meat, Terra Prime has a large pickup-and-deliver component. You can also win by ignoring that and going out to colonize distant planets and defeat aliens. But running goods back to the base is also a solid strategy.

Maybe check out Last Train to Wensleydale? From watching a video, I think I remember it having a strong pickup-and-deliver aspect, in addition to route-building. Could be wrong.

Oh, and I consider Flash Point: Fire Rescue to be a pickup-and-deliver pure co-op, if you wanted to go that direction.
