Can anybody recommend any genuinely interesting games for adults to play in the car during a long road trip? Bonus points if the main mechanic does not involve spotting things along the road.

The best one I can think of is Twenty Questions.

Most of my road trips have been with trivia dorks, so Botticelli has gone over well:

EDIT: A variant of 20 Questions we always preferred was N Questions, where the guy coming up with the puzzle tries to come up with something diabolical (but still possible; something everyone either knows or can infer existed), while everyone else is just trying to get it at all, never mind how many questions. Examples: The bullet that killed Lincoln, the period ending the last sentence in Remembrance of Things Past, the love of the circus, and the white, white-squared bishop used in the chess set of the Spassky-Fischer match.

If you have a tray or something wits and wagers would probably work. No hidden information and just reward for winning chips not guesses. Not on windy road though

You can play the "movie game" where everyone takes turns saying the name of a movie; the only rule is that you have to pick a movie that starts with the letter that the last person's movie title ended with.

I like looking at the license plates of cars passing and trying to make a word containing those letters. double points if you get the letters in the same order as the license plate.
