As a Michigander who grew up eating deep dish and now lives in the south where I couldn't find some decent deep dish if my life depended on it, I will say this:

Poorly made deep dish is from the depths of hell.

Well made deep dish is manna from heaven.

One cannot *expect* non-midwesterners to know the difference, though some may eventually be led to the light.

Italian and European law

In Italy, there is a bill before Parliament to safeguard the traditional Italian pizza, specifying permissible ingredients and methods of processing[13] (e.g., excluding frozen pizzas). Only pizzas which followed these guidelines could be called "traditional Italian pizzas" in Italy.

On 9 December 2009, the European Union, upon Italian request, granted Traditional Speciality Guaranteed (TSG) safeguard to traditional Neapolitan pizza, in particular to "Margherita" and "Marinara". The European Union enacted a protected designation of origin system in the 1990s.



It's actually quite useful. I used the "official" recipe to make ragù bolognese.

I fully agree with you on what is and is not pizza.
Those deep pan dishes may be delicious when prepared correctly, that does not make them a pizza.


Just curious what is lacking on number 3.

That California heresy is to focus on the toppings, obscuring the trinity of cheese, bread and tomatoes. The foundation for a good pizza is present, but obscured under the weight of worldly flavors.

I can see the cheese and it looks like triage in a war zone... so it's probably not pizza... but I'd eat it just the same. You only live die once...

I prefer Philadelphia style pizza over either Chicago or New York.

But I like Chicago definitely over New York. Not a fan of slimy dough, covered with grease.

I do agree that Chicago pizza is probably better described as a form of lasagna, not pizza.

Oh, its good.
