What is it called where all but one of the players is on the same team, and one player plays the opposition? I.e. everyone is trying to beat the one guy playing the "enemy".

Can you give examples of games with this mechanic?

It's called "one-versus-many".

Some examples:

Descent: Journeys in the Dark
Fury of Dracula
Middle Earth Quest
Mansions of Madness
Letters From Whitechapel
Scotland Yard
Fortress America

EDIT: I think "Friedrich" also falls into this category, if you're in to Wargames.

If the opposition is secret, it falls into "hidden traitor" or "informed minority" area like Werewolf or The Resistance or Battlestar Galactica: The Board Game (though all of those have multiple traitors).

I'm not sure what it would be called if the opposition is known from the start. Maybe: The Atari Combat mechanism

There is a GeekList listing all games with a 1 vs all mechanism. I tried to find the GeekList for you but it was impossible – searches didn't turn up anything, and looking through the 167 pages of GeekLists for games like Descent wasn't viable.

Moral: we badly need some sorting to GeekLists.

When I tried the method of "searching among the GeekLists of a game that had this mechanism" I was a bit "ouch" when I saw the 100+ GeekList pages, most of which were "games my Secret Santa sent me year [insert year]" or "what the hell happened here" or "games you'd never think that your SO would play with you" and other very non-game-attribute lists. As one of those only and solely interested in such lists (and seriously, I kind of doubt the general user interest in "games my Secret Santa sent me year [insert year]"), this discovery was disheartening.
