If you know of games whose theme is centered on the personification of death could you list them here?
It's kind of a hard thing to search for with BGG's search functionality.

Mostly looking for games where the personification is the main focus.
Possibly the players are playing AS death or trying to outwit...
Sorry, kind of a nebulous idea and question.

Any help would be appreciated.
Thanks in advance.

There's the video game Darksiders II

How about Gloom? Not exaclty personification of death, but you are trying to kill your family whilst they are as unhappy as possible

Plague & Pestilence features medieval-style Death illustrations on many of the cards, and you're trying to avoid losing your population to various awful ways of dying (drought, famine, etc). There are also the Death Dice

In The Bottle Imp you try to keep your soul from eternal damnation by getting rid of the imp and tricking others into taking it.

And I haven't played it, but Gloom might interest you.

Rattus has the little grim reaper figure that moves around the board and causes plague outbreaks you are trying to avoid. Does that fit?

Four Dragons

Note that there was another game published with the same name; I have no knowledge of the later one, but this one was worth checking out.

The adventure video game series Gauntlet had Death. In Gauntlet I, Death would drain life from PCs it touched. In Gauntlet Dark Legacy, Death appeared in two forms. Red Death would drain life. Black Death would drain experience points and experience levels.

You asked for boardgames with Death. I mention the Gauntlet video game series because HeroQuest, Descent 1, Descent 2 and Super Dungeon Explore are close boardgame simulations of Gauntlet. All of these boardgames do not have Death, therefore you will need to write a few variant rules. I have wanted to add Death to these boardgames for a long time. If I write some rules in the near future I will post them here.

Dark World had a Death-like character called The Haunter that killed PCs upon contact. The miniature was cool.
