You set up as though it were a 2 player game, but then take 7 dice instead of 5.

It's fairly fun, but very easy, probably only marginally harder than 2 players. 7 Dice in one place is a big edge.

As said above, play with 7 dice instead of 5. But if that gets to be too easy. Increase the difficulty by adding more starting gems. Once you have mastered the base game solo with the hardest difficulty, start adding one module at a time with increasing difficulty.

Would removing a die make it too much harder?

Then it would be impossible to win on the highest difficuly. With only 6 dice, you'll never be able to activate the 7 gem chambers. So you can't get the exit down to a number of gems in order to escape with only 6 dice.
