I made shredded chicken in mole sauce, on Tuesday, and I took the leftover and put it into a burrito for lunch today. Chocolate-chili numminess!

As an extra bonus, I put leftover refried black beans and marble cheese in there with it.

It may not look it, but lunch was muy delicioso today, I can assure you.

Do you do the molé from scratch?

I made mine from a paste that I bought at a local Mexican specialty store. One part paste to 3 parts chicken broth, simmer to reduce & thicken.
I added a tablespoon of brown sugar and a bit of salt at the end, but it was dead easy otherwise.
A nice chili & spice bite to this, so I was impressed with the paste.

Homemade would be on a whole other level, I know.
I've seen people make it on TV shows. Wow. Only 20 ingredients to your sauce? This is how to really do it...

Well, of course, I'm not some uncivilized barbarian, you know! But this drawing shows a measurement of 12" x 8' and you're just not going to find a burrito of those dimensions in Canada.

A representational sketch of a room, eight foot-six by sixteen foot-six, (it actually says 16' x 8', not 12' x 8') and where the optimum placing of joints would occur if you installed cornice on the ceiling of that room, using pieces of cornice that were eight feet long. The extra six inches on each side made a huge difference to the cost.
While not strictly the best use of material (you waste several feet-- almost half a piece-- on eight out of ten pieces of cornice), it does move the joints away from the corners of the room so that you don't have to work with a six inch piece or, even worse, two- three inch pieces on each side.

And you thought that my life was all burritos and games? Think again!

Mole rocks. It is a very temperamental sauce, and can ruin food if you overdo it, though. My Mom used make a fabulous turkey mole over egg noodles (post Turkey Day).
