Haven't played, but just an idea I had:

Squash = Small Radish
Carrot = Large Radish (the one with a face)
Tomato = Mushroom
Artichoke = Fire Flower
Eggplant = Piranha Plant

Bird/Rabbit = Goomba/Koopa
Sundial/Scarecrow = "?" Block/Chain Chomp
Sun = Wing Cap
Rock = Pipe
Stars on Board = Still Stars, but Mario Stars

Maybe throw in some variable player powers (assuming I understand the rules)?

Mario
When your Mushroom is harvested by an opponent, chaining is optional. When you harvest your mushroom, you may re-roll any remaining dice.

Luigi
When you plant a seed, you may change one of your coordinate dice by one. (This ability cannot be used to plant on a star unless the dice already indicated a coordinate with a star)

Toad
Your Mushroom "Seeds" are chained to adjacent Mushroom "Seeds" (but not your Mushrooms).

Peach
When your Seed or Veggie is removed by an opponent's Critter, you may take it back in to your possession as a Seed if you have a remaining Ownership Disc.

King Koopa
Your Critter may change direction once when you move it.

Like I said, I haven't played, so I don't know if the VPP are balanced. Thoughts?

My thought is you should play the actual game. It is great.

I intend to, actually. I have some friends I know would love this. I bet my Gramma would, too. I would actually choose the designer's theme over Mario. I just thought a Mario version would be cool to see.
