My work lunch group plays a lot of Flapjacks & Sasquatches but occasionally only two of us show up. We came up with a two player variant that we feel is more interesting that just playing 1 on 1.

Play is as normal, but you deal a third dummy hand. When it's the dummies turn, draw a red card and put it on the bottom of the three cards it already has, and flip over the top card. If it's a good card play it for the dummy, if it's a bad card the players roll to see who gets it (low roll loses). If it's a duplicate discard it.

If someone plays a sasquatch, switch tages, etc check the dummies hand for debunk or paperwork. If there is one play it. Shuffle the dummies hand after looking at it.

The player to the left of the dummy makes the chopping rolls for the dummy. We've had several games where the dummy has almost won!
