What's the reasoning behind not counting the last person's vote? Just to make it go faster, and not let people overthink it / try to "game" the system?

You pretty much nailed it, we found that without that added pressure people took the time to see what their friends voted for and this added a lot of bias. By not counting the last vote we saw people vote with their gut more and didn't worry about what others thought / voted for which also fit in nicely with the theme of the game.

Why wouldn't you always vote for your own card?

And if the rules forbid you from voting for your own card, why wouldn't you want to be the last, and have your vote invalidated (since it could force your card into a tie or loss)?
