I've tried Carolina BBQ.... but the vinegar turned me off of it.

I've tried Kansas City BBQ.... but all I could taste was the sauce.

I've tried Texas BBQ.... The brisket wasn't bad, but the rest lacked flavor.

Then I tried REAL Memphis dry rub BBQ and that is some good BBQ. I say REAL because what gets served outside of Memphis is often very different than what you get in Memphis.


Texas does beef the best, KC has the sauce, but for everything else it's Memphis.


And if you want to start a fight in Memphis ask the following question in a room of more than two people:

"Where is the best place to get BBQ around here?"

Three summers ago we did an epic roadtrip from AZ to Alabama, up into Tennessee, then through Missouri and Kansas. One of the goals of the trip (aside from seeing family) was to sample as much of the southern cuisine, including the bbq, as possible.

That means we researched and ate BBQ in Texas, Mississippi, Alabama, Louisiana, Tennessee, Missouri and Kansas.

My verdict? Alabama. I can even tell you the place:

It was Fayes Kitchen, outside the tiny little stinkhole that is Sylacauga, Alabama. It wasn't just bbq, it was home cooking. So while there were smokehouses and rib joints, and etc that had some great bbq, there was something about the comfort, deliciousness, and delight of Faye's that none of the other places had.

Best food overall on that trip goes to the boudain sausage and crawfish po boy I had New Orleans, but it was New Orleans, so it's sort of unfair to compare.

If this is your experience with Texas BBQ then you definitely didn't have it at the right place. Hard 8 at BGGCON doesn't count. Le us know if you are ever in Austin. We will change your mind.
