Because they don´t know that it is the trap.
They may take the risk or not!
And other players who knows what it is may bluff.

so when a player select a card they DO NOT look at it first before deciding whether to keep it or discard it?

exactly!
If there is at least one card with the exact pips You rolled You choose one of this cards and if You turn it cheese/trap side up You must take it whatever it is (or You discard it without looking).

Player may only look (any) card if there is no any card on the table with exact pips.

Sometimes you don't know whether a card is a trap. Yet, when the die roll gives you the chance to pick a high card (4,5,6), you might want to take the risk
