The easy mode rules says two of The Necromancer's Reach cards should be removed from the encounter deck, but there are three cards. Is this a typo, or is one card supposed to remain?

Do the easy mode rules say "Remove the two Necromancer's Reach cards" or "Remove two Necromancer's Reach cards"? In the first case I'd call it a typo, in the second I'd assume 1 is intended.

Easy Mode is meant to reduce the difficulty a bit so some of the encounter cards are pulled, but usually not all of them. Otherwise, it would be cupcake mode!

It will be deliberate. One copy should remain in the encounter deck.

I recommend reading this article where Matt Newman (one of the FFG developers) talks about the design of Easy Mode:
http://www.fantasyflightgames.com/edge_news.asp?eidn=4165

Specifically, this paragraph is relevant to your question:
Quote:
If you take a scenario and remove some of its toughest cards, you’re left with an encounter deck that’s still full of challenges, but won’t offer the same potentially crippling draws. Cards such as Caught in a Web (Core Set, 80) and Sleeping Sentry (Road to Rivendell, 46) were completely removed from their encounter decks, but we often found that simply removing one or two copies of a tough card was enough to significantly decrease a scenario’s difficulty and luck factor. For example, Journey Down the Anduin still requires the players to defeat an angry Hill Troll (Core Set, 82), even in Easy Mode - only now, the encounter deck includes just one copy of Hill Troll, and there’s no possibility of drawing a second one on turn one.
